Sweet Corn With Peppers And Onions

Description :

A little different twist on fresh sweet corn.

Ingredients:

-6 Ears Of Fresh Picked Corn On The Cob
-1/2 Cup Finely Diced Onion
-1 Cup Finely Diced Sweet Red Pepper
-2 Tablespoon Olive Oil
-Salt & Pepper
-3 Tablespoons Finely Chopped Fresh Parsley


Directions:

-Use a sharp knife to cut the kernels off the ears of corn.
-In a large frying pan, heat the olive oil and cook the onion and pepper for 4 to 5 minutes until soft.
-Add the corn, and stirring often, continue to cook for about 6 to 7 minutes or until the corn is tender crisp.
-Season with salt and pepper and add the chopped parsley.
-Toss well and serve hot.
